Baking breads and loafs gluten-free and vegan can be a challenging task but not with this easy to make and delicious recipe! For this recipe, the loaf is more of a dessert item, very fruit forward and unique. The glaze is optional but adds the finishing touch on being a great option for holiday parties or celebrations! The bread is vegan, meaning it has no dairy or eggs. Egg replacer in this recipe is the applesauce and bananas. In general, the conversion is 1 egg = 1/4 applesauce or 1/2 ripe banana.
Ingredients:
Bread
3 cups gluten free Namaste Flour
1 tsp salt
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 1/2 cup white sugar
1 cup chopped walnuts
1 cup flaked coconut
1 cup raisins
3/4 cup applesauce
2/3 cup crushed bananas
1 cup crushed pineapple
1/2 cup coconut oil
1/4 cup olive oil
Glaze
2 tsp coconut oil
1/4 cup powdered sugar
2 tsp lime juice (or to taste)
Instructions:
Preheat oven to 350 degrees F.
Grease or Line two 9 x 5 inch loaf pans with parchment paper.
In large bowl combine the flour, salt, baking soda, sugar, cinnamon, and nutmeg. Add the walnuts,coconut and raisins to flour mixture. Stir until blended. Add applesauce, oil, bananas pineapple, and vanilla and stir until blended Pour batter into prepared pans.
Bake at 350 degrees F for 45 minutes or until an inserted tooth pick comes out clean. Cool in pan for 10 minutes then remove to rack or countertop to finish cooling
Mix glaze ingredients together in a small bowl. Heat in microwave for 45 seconds or until ingredients are hot. Whisk together to create a smooth glaze. Stream onto top of room temperature loaves of bread and let set.
