Tasty Gluten-Free and Vegan Oatmeal Cookie Recipe

No gluten- no Whey!

This gluten-free recipe is easy to make and very delicious!

Gluten-Free and Vegan Tasty Cookie Recipe:

Making gluten-free and vegan cookies is a difficult task. Sometimes it takes trial and error to find the right combination of gluten-free flours to make it “taste just right.” This recipe is easy to make and very delicious! I did a taste test to unsuspecting people not knowing the cookies were allergy-friendly and they could not tell they “were not normal.” Not only do these cookies contain no dairy or eggs but it uses coconut oil, which contains healthy fat and has anti-inflammatory properties. Making these cookies not only tasty but healthy! I hope you enjoy them as much as I did!

Instructions:

Heat oven to 350 degrees.

Wet ingredients: Combine and Cream in 1 bowl:

3/4 cup coconut oil
1/2 cup brown sugar
1/2 cup white sugar
1 cup apple sauce
1/2 cup mashed ripe banana
1 teaspoon vanilla

Mix dry ingredients in separate bowl:

1 1/2 cup gluten free flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon salt

Add the dry ingredients to the above wet ingredients and stir

Next mix in the following:

2 1/2 cups oatmeal
1 cup raisins
3/4 cup shredded coconut

or 3/4 cup chocolate chips

Drop by teaspoons full onto parchment covered cookie sheet.
Bake 10-12 minutes until set and lightly browned. Cool for three or four minutes before removing from cookie sheet.
